Amino Acids Distribution in Korean foods

Abstract
The prosperity of a nation depends on the health of the people and the health depends on the natural environment. economic conditions, the sociocultural level and other factors.
Especially food habits affect the nutritional state of the people and their health.
So, we should try to study our food habits and the method of food analysis to devote to promote our nutritional balance. Until the present, our people have taken a heavy diet of vegetables and rice without due consideration for nutritional balance.
Because of this, we face many nutritional problems.
in order to solve them, it is necessary that we invest in protein resources and supply the easential amino acids which are apt to be deficient in us.
Due to the increasing importance of amino acids in the nutritional field, the amino acids content of Korean foods has been partially studied in the past by several workers.
In this work, we tried to analyze 12 kinds of Korean foods for the estimation of 14 kinds of amino acids.
For the estimation of amino acid in Korean foods. Automatic Amino Acid Analyzer was applied on the foods which had been hydrolyzed amino acids in the protein of foods.
All the foods we tried to hydrolyze are maintained in definite conditions for consistency of the data.
From the results of this study, we observed that soybeen products are a good source of protein. though they are planteins and vegetable proteins are less good one.
(We can understand the distribution of amino acids in Korean foods through the study.)
The study may be devoted for Korean people in nutritional field.
This study should be continued in the futures.
